Pork and Chorizo Burger

500g lean beef mince
500g pork mince
100g chorizo diced
2 garlic cloves
1 onion fine diced
1. Slowly fry the diced onion, garlic and chorizo with a little oil and large pinch of salt over medium heat, you do not want to add colour, just cook through the onions and chorizo, the red oils will start to come out of the chorizo and flavour the onions.
2. Once the onions are soft add to the pork mince in a mixing bowl, do not mix in the pan as the heat will start to cook your pork!
3. When you have an even mix add in the beef mince and a pinch of salt, try not to over work the meat, on this occasion it’s not good.
4. The salt will draw out sticky fats which will bind the burger, before shaping your burgers fry off a small piece to check the seasoning and flavour.
